Wild Blueberry Crisp


 

Filling
wild blueberry crisp 5 cups Wild Blueberries
1/4 cup sugar
1/2 tsp grated lemon rind
1 cup (2 medium) diced peeled apples
Crisp
1/2 cup light brown sugar
2 tsp cinnamon
1 tsp nutmeg
1/2 cup white flour
1/2 cup chopped pecans
1/2 cup rolled oats
1/4 pound butter

Preheat oven to 325 degrees F (165 degrees C).

Filling:    In a small bowl, combine the Wild Blueberries, sugar, lemon rind, and apples. Mix well and place in a well-buttered 8 x 8 x 2-inch (20 x 20 x 5-cm) pan.

Crisp:    In a medium bowl combine brown sugar, cinnamon, nutmeg, flour, pecans, and oats. Rub in the butter with your fingers until it resembles coarse crumbs. Spread evenly over the Wild Blueberry mixture. Bake 45 minutes or until the crust is brown.

Serves 6
